Lazy Sunday

This rainy weather makes me want to stay home and cuddle. My lovah thought it was a good idea too, so we had waffles, turkey bacon, hot chocolate and snuggled while watching movies.

I love lazy Sundays. :) Looks like Bubbas enjoyed it too!

Teriyaki Turkey Burgers

I made these for the second time last night, and they keep getting better and better! They turn out really flavorful, and are super easy. I omit the cilantro and scallions in the mix, but add about 1 cup chopped white onion. Delish! Let me know if you try it out and what you think. Happy eating!

These sesame-teriyaki burgers are super flavorful — even more so when topped with grilled scallions.

Ingredients


1 1/4 pound(s) lean ground turkey   
1 Tbsp ginger root, fresh, finely chopped   
1 Tbsp minced garlic   
1 tsp sesame oil   
1/4 cup(s) teriyaki sauce   
1/4 cup(s) scallion(s), chopped   
2 Tbsp cilantro, fresh, finely chopped   
1 large egg white(s)   
2 spray(s) cooking spray   
8 medium scallion(s), root ends trimmed   
4 item(s) reduced-calorie hamburger roll(s)   

Instructions

  • Preheat a grill (or grill pan) to medium-high.
  • In a large bowl, combine turkey, ginger, garlic, oil, teriyaki sauce, scallions, cilantro and egg white; mix until just combined. Make four burgers, about 3/4-inch-thick each.
  • Offheat, coat both sides of burgers with cooking spray.
  • Grill burgers, flipping once, until fully cooked, about 5 to 7 minutes per side. A few minutes before burgers are done, place whole scallions on center of grill and cook, turning once, until bright green and charred, about 2 minutes.
  • Remove burgers and scallions to a plate; lightly toast rolls on grill. Serve each burger on a roll topped with 2 scallions. Yields 1 burger per serving.

Her favorite cake is Funfetti, so I found a recipe to make a home made one. This year I went with cupcakes rather than a cake. They turned out super cute and I'm pretty sure her hubby liked it more than her!

We had a conversation about using our china, so we busted it out and made it a special night!

Don't count your chickens...

before they hatch. Isn't that the saying?

Well, anyway...I am never posting about a weekend until after the fact ever again. Instead of celebrating with friends, I was there for a friend in need. Life always throws curve balls, and we have to be prepared to catch them at all times. (Go Giants!)

I am thankful to have wonderful people in my life, and know that any of them would do the same for me. Love and cherish your loved ones every day. Hug tightly. Love deeply. Give fully.

Europe Trip...Germany!


So we finally sorted through our 1600 pictures from our adventures in Europe. It was fun to re-live all of the memories, but even harder to choose the best ones!

Since we still have so many, I thought it would be good to post in sections and choose only a few that represented that area.

First off we have...Kaiserslautern!

We went to our first ever soccer game, and were very excited about it. The Europeans go CRAZY over soccer and wanted to be part of the madness. It definitely did not disappoint! There was an entire section dedicated to the fans, complete with 3 drum sets, a cheer-master, multiple flags and everyone sporting their scarves.


Here's a pic of the crazy fans. They literally had organized cheers, 3 sets of drums and GIANT flags. So crazy.


The next day, we headed towards Munich for Oktoberfest! It was such an amazing experience and I learned to LOVE beer. By the way, there are 3 beers in each stein. Crazy!

After a day at Oktoberfest, we checked out downtown Munich (or Munchen as it is in German) to see the infamous Hofbrau House and the city center.

After Munich, we headed towards Salzburg, Austria but made a stop to the Neuschwanstein Castle. This is the castle Walt Disney modeled the Princess Castle after. Pretty spectacular! Fun fact: King Ludwig only lived here 162 days. Seems pretty gluttonous, no?



And now we're headed to Austria!!! Hope you enjoyed Germany. We sure did. :)

Tonight we are celebrating my BFF Kaila's birthday with dinner and dancing. It's a new restaurant that opened up downtown, and a super fun dance club!

Tomorrow we are headed to my other BFF Malia's for a Jimmy Buffett concert! Serious parrot heads in tow. I might need to go shopping for the event to match the mood!



Sunday we're headed to a Pumpkin Patch/Corn Maze with our good friends, Jen and Jeff. I seriously hope I don't get lost.



Pretty exciting and fun-filled weekend! So thankful to have wonderful friends in my life. :)

Dream Dictionary...



I've been having some weird dreams lately. A couple of them keep coming back, and thought I should maybe try to figure it out. The analysis is pretty interesting actually.

The first...trying to run but I end up crawling because I can't move. It's a horrible feeling. This is the analysis:

To dream that you are trying to run but cannot make your feet move as fast as you want them to, signifies lack of self-esteem and self-confidence. It may also reflect your actual state of REM paralysis during the dream state.



The second, I keep getting rejected from the volleyball team. This was such a huge part of my life growing up, and not to be selected is devastating. This is what being rejected apparently means:
To dream that you are being rejected, signifies a lack of self-worth. You feel alienated. Alternatively, the dream means that you are being too agreeable and accommodating, where your own sense of self is lost. You need to be more assertive and learn to say no to others.

Happy Birthday, Kaila!!!!

This is a post dedicated to my BFF, or BFE! Kaila and I have been through thick and thin, and was honored to have her stand by my side as my Maid of Honor.

Here's to the late night talks, mending broken hearts, causing trouble around town (Sacramento, Vegas, Mexico, Hawaii) wine....lots of wine, knowing what the other is thinking without saying a word, inside jokes, jokes we think are inside jokes, and knowing someone will be by your side NO MATTER WHAT.

Happy Birthday, Mr. Awesome!

Today is my wonderful/amazing/handsome/funny/awesome husband's birthday! We are celebrating tonight with Mexican food, yummy cake and family. We met when we were just 16, and have grown into the mature adults we are today.

I'm so happy to have him in my life, and am so fortunate to be married to my best friend. I love you, and you make me a better person!
